The new Smart Fridge BYRD® It was designed to solve a specific challenge in bakeries, confectioneries, and professional kitchens: preserving unbaked dough without the need to cover it. Its intelligent system creates a ideal microclimate to prevent tray sleeving, maintaining adequate humidity and temperature to preserve product quality without drying it out.

Thanks to its internal microprocessor, the Smart Fridge Precisely controls the temperature, humidity, and speed of refrigerated air. This allows doughs to be “paused” for up to 48 hours without fully fermenting, which streamlines work, improves organization, and increases efficiency in artisanal and professional production processes.

Additionally, this equipment features a Automatic or manual drive, allowing for cold fermentation with excellent results in texture, aroma, and structure in the final products.
